You could have gone far with the whole Alex having feelings for her thing. Amy marrying Alex because she's afraid she'll never find anybody better since there's no way she's going to have Jack again. Have the wedding be interrupted last minute by Jack who finally remembers, etc.
But I'm pretty sure you have planned something else that will totally work ;)
